Following her senior debut against the Barbarians, McCarthy started every game of the 2017 winning Interprovincial campaign.

Won an All-Ireland club title with Railway Union in 2019.

McCarthy played a key role in Munster winning the Interpro title under head coach Matt Brown in the 2021/22 season.

The forward then moved to the UK to play her rugby and has returned to the Munster squad for the 2024/25 season.
